Creamy Chicken Alfredo- Sylvia Brindley

Prep time-30min, Bake time-12min

Ingredients-

1/4 cup flour
6 boneless, skinless chicken breast halves
1/2 tsp salt
2 TBS plus 1 tsp olive oil, divided
3 cloves garlic, minced
1 TBS minced onion
1 1/2 cups whipping cream
1/3 cup Parmesan cheese
1/2 tsp ground black pepper
1 TBS parsley, fresh or dried

Preheat oven to 375 F. Place flour in a shallow dish or pie plate. Sprinkle chicken with salt; coat both sides of chicken with flour. Heat 2 TBS olive oil in skillet over medium heat until hot. Add chicken ; cook, turning once until golden brown, 2-4 minutes per side. Remove chicken and place in 13x9 inch baking dish.
Heat remaining olive oil in same skillet over medium heat. Add garlic and onion, cook until garlic is fragrant and onion is tender, 1-2 minutes. Increase heat to med-high and add whipping cream, Parmesan and black pepper. Cook until sauce is bubbly and slightly thickened. Spoon over chicken in dish.
Bake chicken 12 min. Sprinkle with parsley. Makes 6 servings


I made this the other night, we had it with stuffing, steamed broccoli, and rolls. Linda came and ate with us and loved it, my family loved it too. I got the recipe from one of those cards you get in the mail, and the picture looked so good I had to try it. I think this is my new favorite way to have chicken!! YUM
