I just made this the other night from a taste of home cookbook. I am always looking for new ways to prepare steak since we are blessed with an abundance of it! Alan rated it a 9 out of 10. I liked the flavor. The mustard flavor was very mild and Alan thought it had a sweet taste.
Prep/Total Time: 30 min.
4 beef rib eye steaks
1 large onion, chopped
4 garlic cloves, minced
1/4 cup butter, cubed
2 Tb. Dijon mustard
Salt and pepper to taste
1/3 cup beef broth
1 Tb. minced fresh parsley
In a large skilled, brown steaks over medium-high heat for 1-2 minutes on each side. Remove and keep warm. In the same skillet, saute the onion and garlic in butter until tender, stirring to loosen browned bits.
Brush steaks with mustard; sprinkle with salt and pepper. Return to pan. Stir in broth. Cook for 5-7 minuts on each side or until meat reaches desired doneness. Spoon the onion mixture over steaks; sprinkle with parsley. Yeild 4 servings.
